Spring is in the Air


Well, I have always been told the first sign of spring is a robin..Well amazingly I seen one yesterday. Yes, the robin was by himself looking for food. Oh, the joy that little bird brought me for a moment. That's when I knew that spring isn't to far away..Hurray, hurray for us here in the cold state. Our summers are so short as it is. Believe me it's been one long winter here. So soon I'm hoping his little feathered friends will be joining him soon. Lets go Rockin Robin.....

Ahhh, Easter..Too know Jesus has Risen brings great joy. I do remind my children and grandchildren why we celebrate Easter. Besides the bunnies, candy and eggs. Praise the Lord for his Greatness.


We enjoyed our day. Fine meal of ham, potato's, fruit salad, creamed corn and of course last but not least the delicious deserts. I say deserts 'cause there where two. Why settle for one. Bunny cake and a fantastic peanut butter pie that was to die for.

How do you celebrate St. Patricks Day?


1) eating corned beef and cabbage


2) wearing green so you don't get pinched


3) Talk Irish





Well, I like to wear green, since I don't like to be pinched. But, I do like corned beef and cabbage. Irish talk I cannot do since I'm full blooded German.


Did you know that Irelands is 8,000 years old with 5 million people? Ha, just read that. That is one place my son Tate and I would love to go visit. To go to a Pub, listen to the wonderful use of language. Most people don't know this about me but I love Irish music and dancing.To meet the warm friendly Irishmen and ladies of course. Just to see the landscaping would be breathe taking, i'm sure. Maybe some day *sigh*. And if I do go maybe I would see a leprechaun or a fairy.....


Here's a recipe I will share with you try it on St. Patricks Day your family and friends will love it...






JELLO "POKE" CAKE


1 bx. yellow or white cake mix1 (3 oz.) bx. green jello1 (8 oz.) 9 x 13 baking dish Optional flavor combination: lemon cake mix - orange or lemon jello
Bake cake according to package directions. While cake is cooling in its pan, poke holes all over with large fork. Mix jello according to package directions. Drizzle jello liquid over cake. Make sure jello penetrates all holes. Chill several hours or overnight. Frost chilled cake with whipped topping. Serve.




COOL WHIP AND PUDDING FROSTING


Ingredients
1 (3 ounce)package jello instant pudding mix
1 (8 ounce)container cool whip topping
1 cup milk


1/4 cup powdered sugar


Directions
1combine ingredients except the Cool Whip in a medium bowl and beat on low until well blended, about 1 minute.
2Fold in Cool Whip topping.
3Let stand for 5 minutes before frosting the jello cake.
4refrigerate for 2 hours before serving.
